Lasagna Soup

My husband and I both grew up on store-bought frozen lasagna being in the regular meal rotation. As an adult we realized- it’s not as good as we remembered and it takes forever to cook. At that time deconstruction of food was all the rage and I was inspired, so I set out to make a simpler version of our childhood favorite. This recipe is so incredibly simple & is ready in 30 minutes or less. 

In a large pot, I heat some olive oil & add ground meat. We usually use ground beef but, chicken and turkey as various sausages (chicken and others, removed from the casings) work well as well. Once the meat is almost cooked add diced onion, minced garlic, and herbs. When the onion is translucent, the garlic is fragrant and the meat is cooked through add chicken broth and crushed tomatoes. Bring to a simmer and add seasonings, salt & pepper to taste. 

In a separate pot cook noodles according to the package instructions. You can use broken-up lasagna noodles however we love using whatever random shape we have on hand. 

While the noodles cook mix the ricotta, parmesan, and mozzarella in a separate bowl to make the topping. 

Drain noodles and either add them to the soup or spoon soup over noodles topping with ricotta mixture. Adding the noodles to the soup will eventually soften the noodles beyond palatable so if you plan to wait to eat it or keep leftovers leave the noodles on the side.

Ingredients
  

Soup

  • 1 Box Lasagna Noodles broken up or any other shaped noodle
  • 1-2 Pounds Ground Meat chicken, beef, turkey or sausage
  • 1 Medium Onion diced
  • 1 Tbsp Garlic minced
  • 4 Cups Chicken broth 32 oz box
  • 28 Oz Crushed tomatoes
  • 1.5-2 Tbsp Italian Seasoning oregano, basil, rosemary, thyme
  • Salt & Pepper to taste
  • 1 Box Noodles

Topping

  • 1 Cup Ricotta cheese
  • 1/2 Cup Mozzarella shredded
  • 1/4 Cup Parmesan shredded

Instructions
 

  • Cook noodles according to the package directions.
  • In a large pot begin browning the ground meat. When meat is nearly cooked through add your onion & garlic.
  • Once the onion is translucent & the garlic is fragrant you will want to add the broth & crushed tomatoes.
  • Cook noodles according to the package directions
  • Add the italian seasoning as well as salt & pepper to taste.
  • While this simmers mix ricotta, parmesan, mozzarella, salt & pepper.
  • We prefer to spoon the soup over the noodles, so leftovers don't result in soggy noodles, top with a scoop of the ricotta mixture & enjoy!
