Soup
- 1 Box Lasagna Noodles broken up or any other shaped noodle
- 1-2 Pounds Ground Meat chicken, beef, turkey or sausage
- 1 Medium Onion diced
- 1 Tbsp Garlic minced
- 4 Cups Chicken broth 32 oz box
- 28 Oz Crushed tomatoes
- 1.5-2 Tbsp Italian Seasoning oregano, basil, rosemary, thyme
- Salt & Pepper to taste
- 1 Box Noodles
Topping
- 1 Cup Ricotta cheese
- 1/2 Cup Mozzarella shredded
- 1/4 Cup Parmesan shredded
Cook noodles according to the package directions.
In a large pot begin browning the ground meat. When meat is nearly cooked through add your onion & garlic.
Once the onion is translucent & the garlic is fragrant you will want to add the broth & crushed tomatoes.
Cook noodles according to the package directions
Add the italian seasoning as well as salt & pepper to taste.
While this simmers mix ricotta, parmesan, mozzarella, salt & pepper.
We prefer to spoon the soup over the noodles, so leftovers don't result in soggy noodles, top with a scoop of the ricotta mixture & enjoy!
